Japanese Soy Sauce Soup Noodles

This bowl of Japanese Soy Sauce Soup Noodles looks simple yet offers surprising layers of flavor.

The clear soy sauce broth tastes sweet and smooth, without any heavy saltiness. It has a natural freshness and sweetness, making it very drinkable.

The noodles are fine with a chewy texture, absorbing the broth for a silky-smooth bite every time.

The toppings are also quite rich, including:

Shiitake mushrooms
Qingjiang greens
Dried bamboo shoots
Shredded nori
White sesame seeds
Bean sprouts

Halfway through, we discovered two different types of tofu pouches hidden in the bowl.

One is a plain tofu pouch that becomes tender and juicy after absorbing the broth. The other is a stuffed tofu pouch with a firm filling, adding different layers of flavor.

Both tofu pouches have their own unique characteristics and are impressive highlights of this noodle dish.

Oyster Omelette

Another popular dish is the Oyster Omelette (Vegetarian Oyster Omelette).

The ingredients include straw mushrooms, bean sprouts, shredded nori, and bok choy, retaining the classic texture and flavor of oyster omelette.

The center of the omelette remains moist and chewy with a slight stickiness, while the edges are golden and slightly crisp, offering a crunchy texture.

Paired with a specially made sweet and savory sauce, the sweet-salty balance is just right without being too heavy. It complements the vegetables and straw mushrooms perfectly, making it delicious even for those who do not usually eat vegetarian food.
