However, regarding the braised broth, the flavor layers are somewhat lacking. If you want a richer broth, consider adding pickled vegetables from the self-service area to add depth.
As for the noodles, they are on the thicker side. In terms of texture, I felt they lacked a bit of chewiness. For me, the noodles would be more perfect if they were a little more springy. Additionally, the noodles' ability to absorb broth is slightly weaker. However, this is purely my personal preference for noodle texture; those who like thick noodles might find it fine.
