Jianhu · Yue Banquet|A New Chinese-Style Shaoxing Restaurant Hidden by Jianhu Lake

"Jianhu · Yue Banquet" opened at the end of 2023. Designed around Jianhu's landscapes and ancient Yue culture, the dark-toned building is paired with expansive water features, rocks, and mist. The black pool reflects the restaurant's large characters, creating a modern, understated new Chinese style that feels grand and photogenic.

The hotel is near Keyan Scenic Area and Luzhen, situated between Keqiao New District and Shaoxing's old town, making it very convenient for meal stops.

Jianhu · Yue Banquet – Hearty Dish Highlights

Shaoxing cuisine emphasizes "fresh, saucy, moldy, fermented, and drunken." This multi-person set meal is truly abundant.

  • Huadiao Immortal Chicken: Whole chicken and pork belly are slow-cooked in a clay pot with only yellow wine and natural moisture—no extra water added. The chicken is tender and falls off the bone, releasing a rich wine aroma that pairs perfectly with rice.

  • Braised Pork with Preserved Mustard Greens: The reddish-brown pork belly absorbs the savory flavor of Shaoxing dried mustard greens (meigan cai).

Picking up the two-tone mini steamed buns from the edge brings a pleasant surprise—they're not solid; the bottom is hollow like a hat. Wrapping the pork belly inside creates a sweet-salty combination, essentially a Shaoxing-style gua bao!

  • Shaoxing Preserved Goods Platter: Rooted in Anchang ancient town's preserved goods culture, the sausages and cured meats are air-dried and infused with soy sauce, resulting in firm texture and intense savory aroma.

  • Seaweed Fish Ball Soup: The delicate, melt-in-your-mouth Jiangnan-style fish balls are paired with seaweed for extra umami, providing a refreshing contrast to the heavier dishes.

  • Home-Style Braised Jianhu Mixed Fish: A must-try river-fresh dish from the water town. Small fish are braised in sauce to enhance flavor; the tender flesh absorbs the juices beautifully.

  • Amaranth in Superior Broth: Tender amaranth is simmered with diced preserved egg, ham, mushrooms, and shrimp in a rich broth—fresh and palate-cleansing.

  • Shaoxing Three Stinks: A trio of stinky tofu, moldy amaranth stems, and stinky winter melon. The stinky tofu is crispy outside and tender inside; the amaranth stems require sucking out the jelly-like core; the winter melon is soft and fluffy. The smell is intense, but locals enjoy the fermented "freshness"—definitely worth trying!

  • Garlic Vermicelli Steamed Shrimp: Fresh shrimp are split open, topped with garlic, and steamed until sweet and springy. The vermicelli at the bottom soaks up all the shrimp juices and garlic essence—extremely addictive.

  • Seasonal Fruit Platter: Loaded with watermelon, cantaloupe, cherry tomatoes, longan, and dragon fruit—juicy and refreshing, the perfect ending to the feast.

Summary

If you want to experience Shaoxing's food culture in one meal, "Jianhu · Yue Banquet" is the top choice. We highly recommend the Braised Pork with Preserved Mustard Greens paired with mini steamed buns, while Shaoxing Three Stinks offers a rare taste of local culture. Combined with the stunning Oriental garden views and excellent ambiance, it's highly recommended to include in your Keyan and Luzhen itinerary!
